Recently Joe's Crab Shack received a lot of press for choosing to get rid of tipping in the chain of restaurants. They were hoping that this would allow them to retain wait staff better by being able to offer them a reliable income. While this sounds like a good plan on paper, is it actually better for servers and diners? While tipping makes it so a server cannot predict how much money they will earn from week to week, it also gives them the opportunity to earn more money by providing excellent service.
