Wine is commonly served at the wrong temperatures, usually too cold, sometimes too warm – if it gets too warm then it will taste worse and the alcohol will become more apparent within it. If it gets too cold, it will mask and hide the wonderful tastes available to you. When you leave wine too long, it goes off, this is called oxidising, it is where the wine comes in contact with air for too long, making it develop past the point it is supposed to, making the flavours turn bad; the same thing happens when the wine is left too warm, as this speeds up the process. When you serve wine at the correct temperature for its type, you unlock all the wonderful flavours that winemakers intended for you to taste when making it.
